Ironically, this is inspired by The Lincolnshire Chef’s child-hood memories and his Dad, a Yorkshire man. Shredded short rib, dehydrated black pudding, caremelised onion and milk purée and Henderson’s Relish, dress a Yorkshire Tea infused home baked sourdough.
Carpaccio of Lincoln Red
Featuring Lincolnshire’s finest beef, this dish is simply about the ingredients. horseradish butter milk adds a depth of flavour and rocket crackers add a pepperiness to the Lincoln Red. Edible herbs and flowers are picked on site for an additional sweet and peppery taste.

For anyone fancying something a little lighter, Fish Finger Sandwich served Monday – Saturday lunch time’s is made with Oscar Cleve’s haddock, cooked in a Axholme Beer batter and served with tartar sauce, slaw and a choice of hand cut chips or sweet potato fries on white, brown or gluten free bread. Gluten free batter is available, and gluten free products are cooked in a separate fryer, upon booking request.
Eton Mess.
Our modern take on this classic dessert features elderflower and lavender foraged from our gardens, a hint of lemon and is served with a Lincolnshire Pin Gin Sorbet, featuring all of the botanicals in the gin. Edible flowers featured on the dish are hand picked on a daily basis, from the pots surrounding the Pig and Whistle, which have all been planted with edible flowers and herbs.
